ABOUT Cormolas Or Flower Buds RECIPE

A traditional Goan Christmas snack. Slightly sweet and crispy

Ingredients Serving: 4

  1. All purpose flour - 1 cup
  2. Sugar - 2-3 tbsp powdered
  3. Ghee - 2 tbsp melted
  4. Salt a pinch
  5. Coconut milk - 1/4 to 1/2 cup
  6. Oil for Deep frying

Instructions

  1. Mix flour, powdered sugar and salt.
  2. Pour in the melted ghee and rub the flour with your fingers.
  3. Knead to a soft, pliable dough by adding coconut milk little by little.
  4. Cover with a wet cloth and leave aside for 15 mins.
  5. Heat oil for deep frying.
  6. Take a ball of dough. Roll into a square chapathi.
  7. Cut into squares of about 4-5 cms.
  8. Take opposite sides and twist to join.
  9. Then join the other corners from the open side.
  10. Twist both sides and press so they don't open while frying. I applied a little water before joining the corners.
  11. Gently drop one by one into the hot oil. Ensure that oil is just medium hot and then let it cook on low flame. Fry till brown.
  12. Store in an airtight container. Will stay for a week, if they remain that long
