Carrot Date Cake

Ingredients to make Carrot Date Cake

  • Whole wheat flour 1 cup
  • Grated Carrots 1/2 cup
  • Dates 12-15
  • Milk 3/4 cup
  • Powdered sugar 1/2 cup
  • Olive oil 1/2 cup
  • Baking Soda 1 tsp

How to make Carrot Date Cake

  1. Soak dates in warm milk overnight, or half an hour
  2. Grind it into a smooth paste
  3. Transfer the dates mixture into a bowl big enough to mix the batter
  4. Add oil and sugar to the dates mixture and whisk well till it gets incorporated
  5. Add in the grated carrots to the batter and mix well
  6. Now sieve the wheat flour and baking soda and add it to the batter
  7. Slowly mix the batter but do not over-mix it
  8. Add the batter to a greased oven tin
  9. Preheat the oven for to 180 degree C and bake for 10 minutes
  10. Insert a toothpick and if it comes out clean the cake is ready or else bake till done
  11. Allow it cool completely and then unmold the cake and cut into slices and serve
My Tip: Brown sugar can also be used instead of white sugar, e only difference would be in the colour of the cake
