Sweet and Sour Pine Fried Rice

Ingredients to make Sweet and Sour Pine Fried Rice

  • rice (basmati )- 1 cup
  • Canned pineapple - 3 slices or 1 cup
  • Crushed ginger and garlic - 1tbsp
  • One green chilly -split and chopped
  • One medium onion - finely chopped
  • Chopped Spring onion greens or chives - 1 tbsp
  • Sesame oil -1 tsp
  • Soya sauce -1 tsp
  • Pine Nuts -2 tbsp
  • Salt and pepper to taste

How to make Sweet and Sour Pine Fried Rice

  1. Soak rice in water for half an hour to one hour
  2. Discard the water, wash the rice and par boil
  3. Keep cooked rice separate
  4. In a wok heat oil and saute ginger, garlic, green chilly and onions till onions turn pink
  5. Add the pine nuts and fry till the nuts are slightly brown
  6. Now add the pineapple and spring onion greens and saute until the pineapple pieces get caramelised
  7. Add salt, pepper and soy sauce and saute for another 3-4 mins
  8. Add the cooked rice and mix well. Remove from heat
  9. Garnish with chives and serve. Any Indo-Chinese dish like veg Manchurian will go well with it.
