Baigan Khatta

Ingredients to make Baigan Khatta

  • Brinjal 250gms
  • onion chopped 2
  • tomatoes chopped 4
  • coriander leaves 2tbsp
  • curry leaves 2 sprigs
  • mustard seeds 1tsp
  • Roasted methi and cumin seeds 1/2 tsp
  • Roasted sesame seeds 1/2 tsp
  • oil 4 to 6 tbsp
  • salt to taste
  • sugar 1/2 tsp
  • tamarind juice 4 tbsp
  • green chillies 2
  • chilli powder 1tsp
  • ginger paste 1/2 tsp
  • garlic paste 1/2 tsp
  • water 1/2cup

How to make Baigan Khatta

  1. First of all take a mixer jar and add onions, tomatoes,roasted sesame seeds, roasted methi and cumin seeds ginger garlic paste all together and grinder well to form a smooth paste and keep aside
  2. Now Take a kadai and heat it well
  3. Now add oil to it
  4. Add mustard seeds and allow it to splutter
  5. Now add curry leaves and green chillies
  6. Now add brinjals cut into pieces and allow to fry well
  7. Now add chilli powder and the smooth paste and mix well
  8. Now add tamarind juice and mix well
  9. Add water if necessary and close the kadai with a lid and cook till brinjal gets cooked well and oil separates
  10. Now add coriander leaves and serve.
  11. Enjoy with biryani or steamed rice

My Tip:

Fry brinjals in oil to get nice colour and texture
