Christmas Chicken Roast

Ingredients to make Christmas Chicken Roast

  • chicken - 1 kg
  • onion - 4 large ,thinly sliced , 2 medium onion paste
  • tomato - 1 paste
  • garlic paste - 1 tbsp
  • ginger- 1 tbsp
  • red chilli powder - 1 tsp
  • Kashmiri chilli powder - 2 1/2tsp
  • coriander powder - 2 tsp
  • cumin - 1 1/2 tsp
  • salt - As required
  • sugar - 1/2 tsp
  • tomato ketchup - 1 1/2 tbsp
  • Cashewnut paste - 2 tbsp
  • Milk - 1 cup
  • Milk powder -2 tbsp
  • Roast spl garammasala - 1 tsp

How to make Christmas Chicken Roast

  1. Marinate chicken with salt and 1 tsp chili powder for 1 hr
  2. Dry roast 1/2 inch stick cinnamon , 5green cardamoms ,1 black cardamom, 5cloves, 1/2 tsp sha jeera ,2/4 tsp mace,2/4 tsp nutmeg. Make a fine powder. Keep aside.
  3. Heat a pan. Add 2 tbsp oil , add marinated chicken. Fry chicken on both sides till nice brown in colour.
  4. Add remaining oil in the pan, add 2 bay leaves, 3green cardamom ,1/2 inch stick cinnamon ,3-4 cloves. Now add thinly sliced onions. Keep stirring it for 1 minute. then add onion paste and fry onion till light brown.
  5. Now add ginger, garlic paste. Stir it for a minute and then add tomato paste .again stir it for a minute.
  6. Now add chilli powder, Kashmiri chilli powder, coriander and cumin powder and tomato ketchup ,cashew nut paste .add little water and give a good stir.
  7. Stir till oil leaves the side of the pan.
  8. Then add fried chicken , coat well with masala. now add 1 cup milk and 2 tbsp milk powder and stir well
  9. Cover PAN ..reduce flame on low fire for 5 mints or chicken cooked well.. And gravy dried up almost 80%.
  10. Now add roasted garam masala.
  11. Christmas Chicken roast is ready
