ABOUT Melon Granita RECIPE

Fruity Ice Crystals with a wonderful tang to it.

Ingredients Serving: 3

  1. 1 canary melon (or any variety)
  2. 2 tbsp maple syrup (or simple sugar syrup)
  3. Pani-puri concentrate chutney as needed
  4. Pinch of salt

Instructions

  1. Separate the flesh of melon from the skin. Chop them in small pieces and run them in food processor/mixie till very smooth. Strain to get separate any bits of fruit remaining. Blend those bits again in mixie till smooth.
  2. Pour the puree in a freezer proof container. Add syrup and pani-puri concentrate (start with 1/4 tsp and adjust the flavor accordingly) to the puree. Swirl it well.
  3. Freeze for 4 hours or more. Take it out of freezer and with a fork, scrape the ice to form small crystals. Refreeze and repeat procedure two to three times every 30 minutes.
  4. Scoop the granita in serving bowls.
