Veg Hyderabadi Biryani

Ingredients to make Veg Hyderabadi Biryani

  • Basmati rice 1/2 kg
  • Vegetables - (1 Potato, 1 carrot , few beans , 1 cup mattar, 1 capsicum, 1 cauliflower, 2 onions, 2 tomatoes)
  • Roasted onion 1 cup
  • coriander leaves 1/2 bunch
  • mint leaves 1/4 bunch
  • Green chili 12 (optional)
  • red chilli powder 1 teaspoon
  • turmeric powder 1 teaspoon
  • ginger garlic paste 2 tbsp
  • Small piece cinnamon
  • oil 4- 5 tblspn
  • cloves 4
  • Pure ghee 1/2 cup
  • Food colour 1 Pinch
  • Kesar (saffron 1 teaspoon )
  • Cooking cream or mayonnaise 2-3 tbsp
  • 1 lemon
  • 1 bay leaf
  • Maggi cube 1
  • 1 teaspoon black pepper powder
  • salt to taste

How to make Veg Hyderabadi Biryani

  1. First soak rice for 2 to 3 hours in water
  2. Put oil in a pan after it gets heated add cinnamon. Cloves, Bay leaves, Green chillies, Onions. And fry it till golden brown
  3. Add ginger garlic paste. Red chilli powder and tomatoes.
  4. Shallow fry veggies separately and add fried veggies.
  5. Boil the peas till tender
  6. After masala gets totally done, add coriander leaves. Cloves, Mint leaves lemon and salt to taste and bring it to boil.
  7. Cook rice for 10 minutes. Before it gets totally done remove from flame and dry it
  8. Lastly in a pan, lay first layer ready veg masala, Second layer boiled rice and lemon juice.
  9. Make the Third layer of saffron, Milk, Mint leaves, Pure ghee. And add roasted onion and coriander leaves in it.
  10. Repeat this arrangement three times
  11. Keep some space in between the rice so that the rice can be easily steamed. Leave it for 15 minutes on low flame
  12. Yummy delicious Veg Hyderabadi biryani is ready to serve with raita

My Tip:

While boiling rice put little vinegar so that rice becomes long and fluffy
