Ingredients Serving: 6

  1. 500 gms refined flour / maida
  2. 300 gm soft brown sugar
  3. 100 gms powdered white sugar
  4. 1/4 tsp Salt
  5. 1 tsp Cinnamon powder
  6. 1 tsp Nutmeg powder
  7. 200 gms chopped black currants
  8. 100 gms chopped sultanas
  9. 200 gms chopped raisins
  10. 100 gms orange / lemon peel
  11. 100 gms chopped cherries
  12. 500 ml Rum or Brandy
  13. 500 gms butter
  14. 4 eggs beaten well
  15. 4 tbsp milk
  16. 1 tsp Baking powder
  17. 1 tsp vanilla essence
  18. 1 tsp almond essence

Instructions

  1. Mix all the dried fruit together and soak in rum / brandy and wine for a few days
  2. When required drain and keep aside. Reserve the leftover rum
  3. Preheat the oven to 150 deg C
  4. Sift the flour, baking powder and salt together
  5. Dust the soaked fruit / peel with little flour
  6. Cream the butter, sugar and brown sugar well.
  7. Add the beaten eggs, almond essence and vanilla essence and mix well
  8. Add the orange / lemon peel and dried fruits, nutmeg powder and cinnamon powder and mix thoroughly
  9. Slowly add the flour and fold in well. If the mixture is too thick add a little milk
  10. Pour into a greased baking dish and bake at 150 deg C for 1 hour and put a wooden toothpick to see whether its done
  11. Remove from the oven and while hot prick with a toothpick and pour the remaining rum
  12. Just before serving, heat in MW for 1 minute and pour some more rum on the cake. Tastes delicious
