Litchi Fruit Cake

Ingredients to make Litchi Fruit Cake

  • For Vanilla sponge -
  • eggs 4
  • sugar 100gm
  • Vanilla extract 1 tbsp
  • Refined flour 100gm
  • oil 1 tbsp
  • Whipped cream 1 cup
  • Litchis 20 (seeds removed)
  • Cherries 10 (optional)

How to make Litchi Fruit Cake

  1. Preheat oven 180 degrees
  2. Line the cake tin with oil & baking paper
  3. Break eggs in large bowl add sugar,& vanilla extract then whisk with electric beater till light fluffy and creamy texture
  4. Add refined flour slowly & mix with hand. Add oil and mix well
  5. Pour into the greased tin
  6. Bake for 15 minutes at 200 degrees C or till a toothpick comes out clean.
  7. Place on rack for cool 30 minutes
  8. Whip the cream with electric whisk till it becomes fluffy
  9. Slice the cake into two layers
  10. Fill cream with chopped litchi on one layer
  11. Place second half. Press gently. Add a layer of whipped cream and decorate with litchis
  12. Serve cool

My Tip:

Use fresh Litchi if possible. OItherwise, tinned fruit can also be used
