ABOUT Fresh Fruit Delight RECIPE

How about all your favourite fruits chopped down into a healthy bake? It is not only pleasing to your eyes, but to your tummy too. You may use any seasonal fruits and add in dry fruits too, for that additional crunch. Made partly with wholewheat flour, this cake is healthy too. And it uses oil, instead of butter. So here is the recipe to prepare this colorful and delicious cake.

Ingredients Serving: 10

  1. Wholewheat flour 3/4 cup
  2. All purpose flour 3/4 cup
  3. Baking Powder 1 Tsp
  4. Baking soda 1/4 tsp
  5. salt 1/4 tsp
  6. Sugar (powdered) 1 cup
  7. Honey 2 tbsp
  8. Clove 1
  9. Small cinnamon stick 1
  10. Cardamom 1
  11. Eggs 3
  12. Oil 3/4 cup
  13. Fresh orange juice from half an orange
  14. Vanilla essence 1 tsp
  15. Thin slices of orange 4
  16. Thin slices of kiwi 4
  17. Thin slices of plum 4
  18. Diced fresh fruits (orange, banana, kiwi and plum) 1/2 cup
  19. Dry fruits (fresh & dried dates, almond, pista, cashew and raisins) 1/2 cup
  20. Grated coconut 2 tbsp

Instructions

  1. Sieve together wholewheat flour, all purpose flour, baking powder, baking soda and salt twice.
  2. In a large bowl, whisk together the oil and sugar.
  3. Add in the eggs one by one, whisking after each add.
  4. Crush the clove, cardamom and cinnamon stick.
  5. Once the wet egg mixture is blended well, add the crushed spice mix and vanilla essence, and mix well.
  6. To this mixture add the orange juice and honey, and mix.
  7. Now slowly add the flour mixture to this and fold in carefully.
  8. Take 3/4th of the dry fruits and dust them with little flour and add to the batter, mix.
  9. Add diced fruits too.
  10. Preheat the oven to 180 degree centigrade.
  11. Grease the cake tin.
  12. Sprinkle some sugar to cover the bottom of the tin. This is to crystallize the fruits.
  13. Now arrange the sliced fruits and the remaining dry fruits on the pan.
  14. Drizzle the grated coconut over this.
  15. Now pour the batter carefully.
  16. Bake for 35-40 minutes, until a toothpick inserted comes out clean.
  17. Allow to cool completely, and then relish the delicious bake.
