Blueberry Cheesecake

Ingredients to make Blueberry Cheesecake

  • Digestive biscuits or any biscuit's
  • butter
  • cinnamon
  • Nuts of choice
  • Icing sugar
  • cream cheese
  • lemon juice
  • Heavy cream
  • Topping blueberry or strawberry

How to make Blueberry Cheesecake

  1. Crush the biscuits and nuts in the blender and take in a bowl.
  2. Add melted butter to the biscuits and mix well. Make sure the base is not dry
  3. Spread the base in tin and level it with the back os a spoon
  4. Let it set in fridge for 20 mins
  5. In a mixing bowl add cream cheese and blend until smooth.
  6. Add heavy cream and sugar and little lemon juice and mix again till you get a smooth paste.
  7. Once the base is set , add the cream cheese mixture on the base and spread nicely.
  8. Let it set for few hours or overnight in the fridge
  9. Once set add the blueberry topping and set again for minimum 30 mins
  10. Once chilled cut in pieces and serve.
