Ingredients Serving: 4

  1. for cake -
  2. Maida 1 cup
  3. Powdered sugar 1 cup
  4. Cocoa powder 4 tablespoons
  5. Eggs 2
  6. Butter 1/2 cup
  7. Baking powder 1 tablespoons
  8. Vanilla essence 1/2 tablespoon
  9. For sugar syrup -
  10. 2/3 cup cherries (canned)
  11. Cherry syrup (from canned cherries)
  12. For Frosting -
  13. 3 cups dairy free whipping cream
  14. Vanilla essence 1\2 tablespoons
  15. Powdered sugar 10 tablespoons
  16. For decoration
  17. Chocolate shavings ( optional)

Instructions

  1. In a bowl add butter and beat it till it becomes soft and fluffy.
  2. 2.Now add powdered sugar to it and beat it well
  3. 3.Add two eggs to this and beat well.
  4. 4.In another bowl seive all the dry ingredients like Maida, cocoa powder , baking powder and mix this with the eggs batter.
  5. 5.Beat this mixture well .
  6. 6.Add 3 tablespoons milk if you are batter is thick.
  7. 7.Add vanilla essence and mix this well
  8. 8.Take a cake pan and line it with parchment paper and pour your cake batter into it and bake it for 30 minutes at conventional mode in 180 degrees.
  9. 9. To check your cake is ready or not insert a toothpick into it if it comes out clear your cake is ready
  10. 10. Take the cake from the oven and let it cool down or u also can keep it in the fridge for 5 hours
  11. For icing
  12. Take non diary whipping cream and beat it for 20 to 30 minutes.
  13. Add 5 tablespoons of powdered sugar to this and also add vanilla essence to this and beat this for another 10 minutes
  14. You should beat your whipping cream until it forms peaks
  15. For syrup
  16. Take 1/2 cup sugar and add 1\2 cup water to this and heat them for 4 to 5 minutes
  17. Now take sugar syrup from canned Cherries and mix this with the syrup which we made
  18. Icing the cake
  19. Cut the cake into three equal layers
  20. Now take one layer of cake and add sugar syrup to this add a lot of sugar syrup to this as it will keep the cake soft and moist
  21. Take a big dollop of whipping cream and spread it on the cake well.
  22. Put another layer on this and repeat the same process
  23. After doing this with all layers cover the sides and the top of the cake with the whipping cream .
  24. Take a chocolate bar and by using a peeler make chocolate shaving and cover the sides of the cake with this
  25. In a icing bag make your own designs on the cake
  26. Chill this cake for 3 hours and serve it.
