ABOUT White Chocolate Mousse Sugar Cookies RECIPE

This recipe is a wonderful combination of eggless chocolate mousse served in sugar cookie cups.

Ingredients Serving: 12

  1. For White Chocolate Mousse-
  2. 6 oz white chocolate morsels
  3. 7 oz condensed milk
  4. 1 cup heavy whipping cream
  5. 1/8 tsp vanilla extract
  6. For sugar cookies-
  7. 1 cup unsalted butter
  8. 1 cup granulated white sugar
  9. 1 teaspoon vanilla extract
  10. 1/2 teaspoon almond extract
  11. 1 egg
  12. 2 teaspoons baking powder
  13. 3 cups all purpose flour
  14. 1/2 tsp Salt

Instructions

  1. To make Chocolate Mousse-
  2. Whip heavy cream with hand mixer for 4-5 minutes till thick and soft peaks form.
  3. Melt the chocolate morsels in microwave for 30 seconds.
  4. Combine melted chocolate and condensed milk together. Gently fold in the whipped cream with the chocolate mixture.
  5. Refrigerate for 1 hour to chill.
  6. While the mousse is chilling, make Sugar Cookies---
  7. Preheat oven to 350 Deg F.
  8. In stand mixer or hand mixer, cream butter and sugar till smooth (about 3-4 minutes). Add the extracts and egg. Beat again till it's a homogeneous mixture.
  9. Combine flour, salt, and baking powder. Whisk well.
  10. Now add flour 1/2 a cup at a time and beat well. Repeat process till all flour is used up. Gather the dough together and knead with hands till it forms a dough.
  11. To make colored sugar cookies, divide dough in 4 sections and add few drops of gel colors to each section. Knead the color well into the dough. Wrap the dough in cling film to prevent them from drying out.
  12. Make equal sized balls of the colored dough. Press the balls in a muffin mould to give shape and keep the center a hollow.
  13. Bake in the oven for approximately 12-15 minutes or until edges turn slightly brown.
  14. Remove from oven and leave aside to rest for 5 minutes. Transfer to a wire rack to cool completely.
  15. To assemble--- Add spoonful of chocolate mousse on the sugar cookie and serve as desserts.
