Transparent Fruit Cake

Ingredients to make Transparent Fruit Cake

  • mango 1 pureed
  • Gelatine 1 1/2 + 1 tbsp
  • pomegranate 1/2 cup
  • watermelon cut into small Chunks 1/2 cup
  • Lychee juice 1/2 cup
  • Sugar to taste if your mango is not sweet enough
  • Warm water to dissolve the gelatine

How to make Transparent Fruit Cake

  1. Take two small bowls with some warm water on each and dissolve the gelatine 1 1/2 tbsp in one and 1 tbsp in another. Keep aside.
  2. Now take the lychee juice, Pomegranate and Watermelon Chunks in a bowl. Mix the 1 1/2 tbsp gelatine portion into it and mix well.
  3. Pour this mixture in the pan and let it set on the refrigerator. It will take around 15 mins.
  4. Next take the mango puree and add the 1 tbsp gelatine mixture and set aside.
  5. Now take out the base layer from the fridge and pour the mango mixture over it. Let it set in the refrigerator for at least 2 hours.
  6. Take out, unmould it, cut and serve.
