ABOUT Fruit Cake RECIPE

Moist vanilla sponge with added candied peel makes this an exotic snack and perfect tea time bake. As a kid always cherished slice cakes and now it was high time to introduce the same to my kids so without any delay baked this goodness for them. This is a no butter, soda or baking powder recipe

Ingredients Serving: 10

  1. 120 gm - all purpose flour
  2. 120 gm - Caster sugar
  3. 1 tsp - salt
  4. 1 tsp - Vanilla
  5. 1 tsp - lemon juice
  6. 30 ml - Flavorless oil
  7. 40 ml - Full-fat Milk
  8. 4 free range - Egg whites
  9. 4 - free range egg yolks
  10. 1 cup - Candied peel

Instructions

  1. Preheat the oven at 140 degree celsius.
  2. Line one 8 inch baking pan with parchment paper.
  3. In a stand mixer or hand blender beat the egg whites at low speed. Add in the lemon juice to stabilize the whites.
  4. Gradually add the sugar and beat them until stiff peaks are formed.
  5. Add the yolks to the whites and fold them gently using a spatula without deflating.
  6. Sieve salt and flour together atleast twice. Add this sieved mixture to the whites , yolks and fold them gently applying the cut fold method.
  7. Combine milk , oil ,vanilla, candied peel and fold until completely blended.
  8. Now pour the batter into parchment lined baking tray of 8 inch.
  9. Pat the tray to release any air bubbles.
  10. Bake this in the preheated oven for 45 minutes at 140-degree celsius later increase to 160 degrees celsius and bake further for 5 more minutes.
  11. Later cool and slice according to preference.
  12. Yummy slice cake, a favourite of any kid is ready to be enjoyed
