Ice Drop Pineapple Pannacotta

Ingredients to make Ice Drop Pineapple Pannacotta

  • 300 ml milk
  • 300 gms cream
  • 1 vanilla bean
  • 60 gms sugar
  • 6gms agar agar
  • 50 ml milk
  • Compressed pineapple - 200 gms tinned pineapple finely diced
  • 1 tbsp vanilla bean sugar or, to taste
  • Heat proof zip lock bag
  • For Peach orange sphere -
  • 250 gms peach
  • 1/2cup orange juice
  • 1/4 cup sugar
  • 1tsp agar agar
  • 1 cup water.

How to make Ice Drop Pineapple Pannacotta

  1. Vanilla pannacotta - Hydrate agar aga,r add milk cream vanilla bean and sugar and heat it until agar agar and sugar dissolves pour into moulds and set in fridge.
  2. Compressed pineapple - Place all ingredients in a zip lock and fully compress the zip lock in a water bath for 30 minutes. Let it cool and set in fridge
  3. Peach orange sphere - Blend orange juice peach until smooth Heat water sugar agar agar until agar agar is melted add the peach puree and heat it for a boiling pour into cake pop moulds and set in the fridge.
  4. For assembly take the vanilla pannacotta add compressed pineapple top it with peach sphere

My Tip:

For making the ice drop Fill a balloon to desired size freeze until the outside is set. drain using a blow torch
