Ingredients Serving: 10

  1. 300 ml milk
  2. 300 gms cream
  3. 1 vanilla bean
  4. 60 gms sugar
  5. 6gms agar agar
  6. 50 ml milk
  7. Compressed pineapple - 200 gms tinned pineapple finely diced
  8. 1 tbsp vanilla bean sugar or, to taste
  9. Heat proof zip lock bag
  10. For Peach orange sphere -
  11. 250 gms peach
  12. 1/2cup orange juice
  13. 1/4 cup sugar
  14. 1tsp agar agar
  15. 1 cup water.

Instructions

  1. Vanilla pannacotta - Hydrate agar aga,r add milk cream vanilla bean and sugar and heat it until agar agar and sugar dissolves pour into moulds and set in fridge.
  2. Compressed pineapple - Place all ingredients in a zip lock and fully compress the zip lock in a water bath for 30 minutes. Let it cool and set in fridge
  3. Peach orange sphere - Blend orange juice peach until smooth Heat water sugar agar agar until agar agar is melted add the peach puree and heat it for a boiling pour into cake pop moulds and set in the fridge.
  4. For assembly take the vanilla pannacotta add compressed pineapple top it with peach sphere
