Ingredients to make Pineapple White Chocolate Lava Cake

  • 1 cup white chocolate
  • 1/2 Cup butter
  • 3/4 Cup Powdered sugar
  • 3 egg yolks + 3 eggs
  • 1 tsp pineapple extract
  • 4-5 tbsp pineapple tib bits roughly crushed
  • 1/2 cup maida
  • 3 tbsp Desiccated coconut

How to make Pineapple White Chocolate Lava Cake

  1. Preheat oven to 190 C. Grease and dust ramekins.
  2. Melt white chocolate and butter in a microwave or in a double boiler
  3. In a stand mixer fitted with paddle attachments, add chocolate and butter beat in sugar, eggs, egg yolks, pineapple crush and pineapple extract
  4. Add flour and coconut and gently fold in until incorporated.
  5. Pour the batter into ramekins or muffin tray
  6. Bake for about 10-14 minutes till the edges are golden Let them cool in the pan for 2-3 mins run a sharp knife along the sides of the cake to release them from edges and carefully flip on to a plate.
