Rich Dry Fruit Plum Cake

Ingredients to make Rich Dry Fruit Plum Cake

  • all purpose flour 2 cups/240 gms
  • sugar 1and 1/4 cup
  • Soft unsalted butter or refined oil 250 gms
  • eggs 5
  • baking soda 1/2 tsp
  • Baking Powder 1 Tsp
  • salt 1/2 tsp
  • Dry ginger Powder 1 Tsp
  • cinnamon powder 1tsp
  • cloves powder 1/2 tsp
  • nutmeg powder 1/2 tsp
  • Cardamon powder 1tsp
  • Vanilla Essence 2tsp
  • For caramel -sugar 1/2 cup
  • water 1/4 cup
  • Rum or red wine for soaking the dry fruits.
  • nuts 1 cup(cashew,almonds, walnut, pista)
  • raisins 1/4 Cup
  • Dry dates 1/4 cup
  • apricots 1/4 cup
  • Prunes 1/4 cup
  • Tutti fruity 1/4 cup

How to make Rich Dry Fruit Plum Cake

  1. Preheat oven to 180 degree C.
  2. Take sugar in a sauce pan and heat it on low heat.
  3. Now it will slowly start to melt.
  4. As it gets nice dark color take it off the heat and add water.
  5. Heat again till the sugar dissolves again.
  6. Set aside to cool.
  7. I had soaked the dry fruits 1 month earlier in red wine.you can use rum as well .
  8. Soak them in a glass jar and stir with wooden spoon on alternate day.
  9. Keep it covered in a cool dry place away from direct sunlight.
  10. Take the dry fruits in a bowl and toss with 2 tblsp of flour.
  11. Sieve all the dry ingredients and set aside.
  12. Take butter, sugar,vanilla in a bowl and beat with a electric beater till it is creamy.
  13. Add in eggs one by one till creamy.
  14. Now add in half of the flour mix and half of the caramel.
  15. Fold gently and add the remaining flour and caramel.
  16. Add the dry fruits and fold gently.
  17. Pour this in a greased pan and bake for 50 -60 mins
