Ingredients Serving: 10

  1. For Gujiya Pastry-
  2. 1 cup maida
  3. 4 tbsp Butter
  4. 1/4 tsp salt
  5. 1/4 cup water + 1/4 cup water (more)
  6. Oil for frying
  7. For stuffing -
  8. 5 tbsp rawa
  9. 1 tbsp sugar powdered
  10. 2 tbsp strawberry chopped
  11. 2 tbsp grapes chopped(any colour grapes)
  12. 1 tbsp dried blackberry chopped
  13. 1 tbsp roasted nuts chopped (almond, cashew, raisins, pistachio)
  14. 1/4 tsp eliachi powder
  15. 1 pinch of jaiphal powder
  16. 1 tbsp orange rind
  17. For sauce -
  18. 1 cup strawberry pulp
  19. 1/2 cup orange juice
  20. 3 tbsp mix berry syrup
  21. 3 tbsp sugar
  22. 1/4 tsp kesar( soaked in orange juice)

Instructions

  1. For Pastry - Take a bowl, add maida and salt, mix it and make a well in the center, now add ghee, and mix the ghee thoroughly with the flour, so that every grain is first properly coated with the ghee.
  2. Using water (1/4 cup at a time) knead a hard dough. Cover with a damp cloth and keep for 15 minutes
  3. 3. rest the dough for 30 minutes. after that you get a smooth dough.
  4. For Stuffing - roast the rawa on a pan. When a sweet smell comes, turn off the heat. Keep to cool
  5. mix all the above stuffing ingredients in a bowl , and rawa and keep aside.
  6. For Sauce - heat the saucepan, add all the above sauce ingredients and boil till it becomes a thick sauce.
  7. To make Gujiya, make a round roti with the pastry dough, set in a gujiya mold. stuff the fruity mixture and apply ample of water in the edges of the mould, gently press the gujiya mold and hold for 10 seconds.
  8. Remove excess dough with a sharp knife. Cover and keep gujiyas for 15 minutes
  9. fry the gujiyas in low flame. Turn gujiya gently and fry till golden from both the sides
  10. Take gujiyas in a plate and pour the warm sauce on it and enjoy the gujiyas.
