Guava Lava Cookies

Ingredients to make Guava Lava Cookies

  • 115 grams or ½ cup unsalted butter
  • 90 grams or ¾ cup icing sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 190 grams or 11/2 cups all purpose flour
  • Pinch of salt
  • For the guava filling :
  • 2 medium sized guavas or ½ cup guava puree
  • 100 grams or ½ cup granulated sugar

How to make Guava Lava Cookies

  1. Chop up the guavas and puree in your blender / juicer /processor . Pass the puree through a sieve to remove seeds and any gritty bits.
  2. Bring the sugar and puree to a boil in a saucepan and then simmer for around 15 minutes as it gets thick and sticky.
  3. Spread the mixture in a small pan (approximately 5 or 6 inches) and freeze for half hour.
  4. To make the cookie dough , beat the butter and sugar until light and fluffy.
  5. Add the egg and vanilla, beat until incorporated.
  6. Add the flour and salt. Beat until a dough forms.
  7. Chill the dough for 15 to 20 minutes until its easier to handle.
  8. Meanwhile, preheat your oven to 160 C / 325 F. Line a cookie sheet with parchment or butter well.
  9. Cut the chilled guava filling into 25 squares or pieces.
  10. Make balls of dough about 2 cm in size and flatten. Place one square of guava filling in the centre . Pull the dough over the filling from all sides. Smoothen and shape into rounds.
  11. Place the filled dough balls on the prepared pan about 2 inches apart . Bake at 160 c for 20- 25 minutes .The sides will start to lightly brown.
  12. Cool for few minutes on a wire rack.

My Tip:

Store cool cookies in an airtight container at room temperature fo upto 5 days. For an easier filling option , use ready made guava paste , any fruit jam (chilled ) .
