Buttery , crumbly cookies stuffed with a gooey sweet and sticky guava filling . Its literally like a burst of brightness in your mouth when you bite into it !
The guava filling makes it look so mouth watering good!
Chop up the guavas and puree in your blender / juicer /processor . Pass the puree through a sieve to remove seeds and any gritty bits.
Bring the sugar and puree to a boil in a saucepan and then simmer for around 15 minutes as it gets thick and sticky.
Spread the mixture in a small pan (approximately 5 or 6 inches) and freeze for half hour.
To make the cookie dough , beat the butter and sugar until light and fluffy.
Add the egg and vanilla, beat until incorporated.
Add the flour and salt. Beat until a dough forms.
Chill the dough for 15 to 20 minutes until its easier to handle.
Meanwhile, preheat your oven to 160 C / 325 F. Line a cookie sheet with parchment or butter well.
Cut the chilled guava filling into 25 squares or pieces.
Make balls of dough about 2 cm in size and flatten. Place one square of guava filling in the centre . Pull the dough over the filling from all sides. Smoothen and shape into rounds.
Place the filled dough balls on the prepared pan about 2 inches apart . Bake at 160 c for 20- 25 minutes .The sides will start to lightly brown.
Cool for few minutes on a wire rack.
