Ingredients Serving: 6

  1. Whole wheat flour soft Dough (adding salt & oil)-using 2 cup
  2. For Fillings:
  3. Sattu (Roasted channa dal) 1 cup
  4. Pickle Masala to taste
  5. Mustard oil -2 tsp
  6. Salt to taste
  7. Lemon juice 1-2 tsp (adjust per taste)
  8. Kalonji (nigella seeds) -1 tsp Ajwain (carom seeds)-1 tsp
  9. Grated ginger 1 tsp Chopped garlic 2 tsp
  10. Green coriander leaves handful Finely chopped
  11. Green chillies 1-2 Chopped
  12. For Baingan Bhurta:
  13. Large brinjal 1 Tomato
  14. Mustard oil 1tbsp
  15. 2 Garlic clove(chopped) 3-4
  16. Green chillies (chopped) 2
  17. Lemon juice for more tangy flavor (optional) 1 tsp
  18. Chopped Green Coriander Leaves- A few sprigs
  19. Salt to taste

Instructions

  1. Mix the wheat flour, oil and a pinch of salt along with some water to make a dough.
  2. Mix the sattu, pickle masala, mustard oil, lemon juice, kalonji, ginger, coriander leaves, green chillies and salt together.
  3. Preheat oven 180 c/ 350 f. Now divide dough, flatten to desired size and place a spoonful of the filling.
  4. Put that balls on a baking tray and baked turning both sides in till it cooked properly.
  5. Put your oven on broil mode(HI or highest temp of Oven) for 2-3 min turning both sides for crisp covering.
  6. Wash, dry and make a slit on brinjal. Place on baking tray /pan with aluminum foil on top keep brinjal & tomatoes .
  7. Roast brinjal & tomatoes on Broil mode Or Highest temp. Peel brinjal & tomatoes and then mash properly.
  8. Add garlic, salt, mustard oil, lemon juice, green chillies & chopped green coriander leaves.
  9. Baingan Bharata ready.
