Cream of Zucchini Soup with Parsley

Ingredients to make Cream of Zucchini Soup with Parsley

  • Olive oil or butter - 2 tsp
  • Sliced onion - 1/2 cup
  • Chopped ginger - 1 tsp
  • Chopped Zucchini - 1 big zucchini or 1 cup
  • Chopped parsley - 2 tbsp
  • salt as required
  • sugar - 1 tsp (optional)
  • Milk - 1/2 cup
  • pepper powder - 1/2 tsp

How to make Cream of Zucchini Soup with Parsley

  1. Take a pressure cooker, add 2 tsp oil or butter.
  2. Add the sliced onion and ginger. Saute well until translucent.
  3. Add in the chopped zucchini and saute for a couple of mins.
  4. Add the chopped parsley, required salt, pepper powder, and sugar if adding.
  5. Close the cooker lid and cook for 2 whistles on medium flame.
  6. Open and let it cool. Once cooled, blend it into a smooth puree with milk and water as per your consistency requirement.
  7. Once again boil the puree and your hot healthy zucchini soup is ready.

My Tip:

Add one green chilly with the onions to give a spicy kick. Since this is a healthy version, i dont suggest to add cream. You can add grated cheese on top. The soup by itself is very creamy and filling!
