Ingredients Serving: 2

  1. Baby potatoes - 15
  2. Oil - 1 tsp
  3. Amchur powder - 1/4 tsp
  4. Hing - 2 pinches
  5. Salt
  6. For Masala -
  7. Mustard - 1 tsp
  8. Fennel Seeds - 1/2 Tsp
  9. Coriander seeds - 1/2 tsp
  10. Fenugreek seeds - 1/8 tsp
  11. Dry red chillies - 5-6

Instructions

  1. Boil the potatoes till just cooked. Peel and keep aside.
  2. Roast the spices given under masala. Let it cool a bit, then grind to a coarse powder.
  3. Apply this ground masala to the potatoes along with salt, oil, hing and amchur powder. Leave for 30 mins.
  4. Roast the potatoes at 180 C in a preheated oven for 20-25 mins. Turn once at half time. Can be done on tawa as well.
  5. Serve hot.
