Ingredients Serving: 4

  1. 1 cup Green peas
  2. 1 cup Cauliflower florets
  3. 1 cup Coriander leaves chopped
  4. 1/2 cup French beans chopped
  5. 4 Potatoes cubed
  6. 4 Onions finely chopped
  7. 3 Tomatoes chopped
  8. 2 Carrots chopped
  9. 1 Capsicum
  10. 100 g Butter
  11. 2 tbsp Vegetable Oil
  12. 2 tbsp Pav Bhaji Masala
  13. 1 tbsp Garlic paste
  14. 2 tsp Cumin powder
  15. 2 tsp Coriander powder
  16. 1 tsp Red chilli powder
  17. 1 tsp Turmeric powder
  18. Salt to taste

Instructions

  1. In a pressure cooker, heat oil and saute onions with garlic paste together. Add the spices and saute on medium heat for two minutes more. Cook tomatoes with onions till they turn mushy and separate from the oil.
  2. Add all the vegetables and mix till they are completely covered with the spices. Pour in 2 cups of water and pressure cook it for 3-4 whistles.
  3. Once the steam has released, place the cooker back on medium heat. Simmer till it reaches a thick sauce consistency and mash the vegetables with help of a potato masher. Put in half of the butter.
  4. Stir till everything is mixed together and adjust the seasonings. It should be a little spicy and tangy. For serving – slit open the pavs (breads) horizontally.
  5. Add a teaspoon of butter in a hot flat pan and toast till the bread is crisp and golden.
  6. To serve, place the bhaji in a bowl, and garnish with a dollop of butter, coriander and onions.
