Ingredients to make Mixed Vegetable Soup

  • 1 Small chopped onion
  • 2 Chopped garlic cloves
  • 1 Cup diced carrot
  • 4 Cups chopped cabbage
  • 1 Cup green beans
  • 2 Whole bell peppers chopped
  • 1 Cup diced tomatoes
  • 6 Cups chicken broth
  • 2 tbspTomato paste
  • 2 bay leaves
  • 1/2 tsp Thyme and basil
  • 2 Cups broccoli florets
  • 2 Sliced zucchini
  • pepper powder for taste

How to make Mixed Vegetable Soup

  1. In a large pot, cook onion and garlic over medium heat until slightly softened.
  2. Add carrot, cabbage and green beans and cook for 5 minutes.
  3. Stir in bell peppers, tomatoes, chicken broth, tomato paste, bay leaves and seasoning. Simmer for 6-7 minutes.
  4. Add zucchini and broccoli and let it simmer for another 5 minutes.
  5. Remove the bay leaves and serve hot.
