ABOUT Oats Coconut Cookies RECIPE

A guilt free indulgence is what I can say about this dish. Naturally sweetened with coconut and honey, no sugar, no butter and with lots of oats. Oats is very rich in fiber and keeps the tummy fuller for a longer time. With whole wheat flour, honey and freshly grated coconut this dish is a total hit.

Ingredients Serving: 4

  1. 1 cup Whole wheat flour
  2. 1/2 tsp Baking soda
  3. 1/8 tsp Salt
  4. 1 cup Fresh shredded coconut
  5. 1 cup Quick-cooking oats
  6. 2-3 tsp Olive oil
  7. 2 tbsp Honey
  8. Toned milk 1 tbsp (if required)

Instructions

  1. Preheat oven at 350 degree Centigrade for 15 minutes.
  2. In a large bowl sift together the flour, baking soda and salt.
  3. Stir in coconut and oats.
  4. Add in oil and honey.
  5. Mix well with a spatula to bring them together (do not knead).
  6. If the mixture is too dry add 1 tbsp of milk to it.
  7. Make some small balls of the mixture, flatten it and bake for 15-20 minutes.
  8. Let it cool and serve with a glass of milk.
