Cream of Asparagus & Spinach Soup

Ingredients to make Cream of Asparagus & Spinach Soup

  • 1 pack asparagus
  • 1 bunch baby spinach or regular
  • 1 white onion chopped
  • 3-4 cloves of garlic minced
  • 3 cups veg broth
  • 1/4 cup full cream
  • 1 Tsp Dried Basil
  • 1 tsp McCormick seasoning
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

How to make Cream of Asparagus & Spinach Soup

  1. Break off tough woody stems of asparagus (about 1-2"). Give them a quick rinse under running water. Drain.
  2. Wash and drain the spinach. Chop them coarsely.
  3. Heat oil in nonstick pan and stir fry asparagus for 2 minutes. Season them with salt and pepper. Remove with slotted spoon to a plate.
  4. In the same pan, add spinach and cook till it just wilts. Remove to a plate.
  5. In the same pan, add garlic and onion,. Sauté till onions are translucent.
  6. Add spinach and asparagus to the pan reserving few aside for garnish. Stir for a couple of minutes. Cool down thoroughly.
  7. Puree the vegetables with 1 cup broth till smooth. Pour the puree in a deep pot and add remaining broth.
  8. Season the soup with onion powder, McCormick seasoning, salt and pepper. Bring the soup to a simmer.
  9. Add cream and simmer for another minute. Switch off gas.
  10. Pour the soup in serving bowl and garnish with asparagus and spinach.
