ABOUT Mint, coriander and coconut chutney RECIPE

Here comes a 'cool' chutney. This chutney gives you room to play around with the ingredients. The fresh flavor of mint coupled with the earthy aroma of coriander leaves and the crunchy taste of coconut, makes a wonderful and tasty medley of flavors. I did not add seasoning to this dish as I wanted to let these myriad flavors, play and calm the senses!

Ingredients Serving: 4

  1. 1/2 cup mint leaves (Pudina)
  2. 1 cup coriander leaves
  3. 4 green chillies
  4. 3 tablespoons black gram dal (split urad dal)
  5. 1 cup grated coconut
  6. 1 teaspoon cumin seeds ( jeera)
  7. 2 tablespoons tamarind paste
  8. salt as per taste

Instructions

  1. Heat oil in a small, shallow pan/wok. Add the split gram dal to it and fry until these turn light brown. Add cumin seeds and fry for a few seconds.
  2. In the same pan, add chopped mint leaves, coriander leaves and green chillies. Saute for a minute. Turn off the flame.
  3. Cool the above mix. The, add it to a blender and mix, to form a coarse paste. Add grated coconut, salt, tamarind paste and little water. Grind well to a fine paste.
  4. Based on your preference, you can add more water if required, to adjust the consistency of this chutney.
