Carrot & Garlic soup

Ingredients to make Carrot & Garlic soup

  • 4 Cups carrots
  • 2 or 3 cloves Garlic
  • 3 cup vegetables Broth
  • 1 cup hot water
  • 1/2 cup chopped onion
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 Stick celery
  • 1 tsp pepper powder
  • salt to taste

How to make Carrot & Garlic soup

  1. Take pan add butter and olive oil heat till it melts (melt butter on low flame).
  2. Add chopped onion, celery cook untill softened 5 to 6 minutes.
  3. Add garlic, thyme cook, stirring untill fragrant 8 to 10 seconds.
  4. Add carrots , vegetables broth , water bring to simmer over high flame (heat).
  5. Reduce flame maintain a simmer cook until very tender smooth 20 minutes.
  6. Cool and keep aside for a few minutes, puree the soup in batches in a blender until very smooth.
  7. Take blended soup in a pan heat for 2 minutes then add salt , pepper powder mix together .
  8. Serve hot with bread.

My Tip:

You can add chicken broth.
