Ingredients Serving: 4

  1. 1 cup - yogurt
  2. 1 cup - sweet corn
  3. 1/2 bundle - spinach
  4. 2 - big fat cucumbers
  5. garlic - 2 (minced)
  6. Juice of 1/2 a lime
  7. A Pinch Za'atar crushed
  8. Dried rose petals - a few
  9. Crushed pistachios - 1/2 cup
  10. 1/4 tsp - red chilli flakes
  11. Salt to taste

Instructions

  1. Hang yogurt for 1 hour in a Muslin cloth. Boil sweet corn and when nearly done, add chopped spinach and shut the gas. Let it blanch for a minute and then drain.
  2. Whisk the hung yogurt and add corn, spinach, lime, salt, zaatar, Chili flakes and chill it in the fridge.
  3. Cut the cucumber half lengthwise and scoop out the seeds making a hollow boat. Leave the skin on, it gives a nice crunch.
  4. Spoon in the curd mix and sprinkle rose petals and pistachios.
  5. Decorate with spinach leaf & tomato slice fixed in satay stick. Serve Cold.

I too confused about Za'atar which name listen first time, but you explain below. But I have one another query. Where it available?
