ABOUT Warm Tofu Salad RECIPE

A simple salad with minimum fuss loaded with all health benefits that includes greens and protein packed tofu which makes the salad totally low calorie and healthy.

Ingredients Serving: 2

  1. 1 small head broccoli
  2. 6 flavored tofu chunks
  3. 3 bok choy
  4. 1/2 pack enoki mushrooms
  5. 1 tsp light soy sauce
  6. 1 tsp minced garlic
  7. Salt and pepper to taste
  8. 1 tbsp olive oil

Instructions

  1. Wash bok choy thoroughly especially at the ends to get rid of grit. Chop coarsely.
  2. Separate the mushrooms and wipe clean thoroughly.
  3. Separate the broccoli florets and if large, cut them in halves.
  4. Place the tofu in warm water.
  5. Heat oil in nonstick pan. Add garlic and sauté on high flame.
  6. Add the greens and tofu along with soy sauce. Stir fry for couple of minutes.
  7. Season with salt and pepper. Give a quick stir and switch off gas.
  8. Serve with rice vermicelli noodles or eat as it is.
