Khaman Dhokla

Ingredients to make Khaman Dhokla

  • For batter :
  • gram flour 2 cups
  • semolina 1/4 cup
  • salt as per taste
  • lemon juice 1 tbspn
  • Fruit salt 1 packet
  • ginger- chilly paste 1 tbspn
  • turmeric powder 1 teaspoon
  • asafoetida 1 teaspoon
  • For Tempering :
  • sesame seeds 1 tea spn
  • Mustard seeds 1 tea spn
  • green chillies slit 2 pieces
  • curry leaves 5 to 8 leaves
  • sugar 1 tbspn
  • water 2 tbspn
  • coriander leaves few

How to make Khaman Dhokla

  1. Mix besan properly adding little water . Then add rawa , ginger chilly paste , salt , sugar , turmeric powder .Whisk well .
  2. Keep aside for ten minutes. Batter should be of pouring consistency.Add fruit salt n put in microwave safe greased tray @ 900 degree for 2 mins . Check with knife if it sticks keep again for 2 to 3 mins. Let it cool.
  3. Once it's cooled cut into pieces and then we will do tempering by taking oil then adding mustard seeds , sesame seeds , asafoetida , curry leaves , sugar and water .
  4. Garnish with coriander leaves.

My Tip:

If you want spongy, add little more water during tempering.
