Layered Vegetable Biryani

Ingredients to make Layered Vegetable Biryani

  • Rice- 2 cups
  • French beans- 50 gms
  • Cauliflower- 50 gms
  • Capsicum- 1
  • Green peas- 1/2 cup
  • Onions-2 large
  • Potatoes- 2 medium sized
  • Carrot- 50gms
  • Turmeric powder- 1 tsp
  • Red chilli paste - 1/2 tsp
  • Coriander powder-1 tsp
  • Garam masala- 2 tsp
  • Tomatoes- 2
  • Raisins- a handful
  • Oil- as required
  • Salt - acc to taste

How to make Layered Vegetable Biryani

  1. Take a pan and wash and soak basmati rice for half an hour. In the mean time chop all the vegetables separately.
  2. Heat 3 tbsp oil in a frying pan, add the potatoes and saute. Now add all the other vegetables except tomatoes to it and fry till golden brown.
  3. Add in the tomatoes and saute for another 5 mins. In another pot, boil the rice with the salt till done.
  4. Now add salt, turmeric powder and red chilli paste to the vegetables then add coriander powder and the garam masala too.
  5. Drain off any extra water from the rice and strain.Add 1/4 of the rice to the vegetable mixture and mix well.
  6. Now for the plating- Take a deep of serving bowl and place a layer of plain rice, then top with second layer of vegetable and third layer of vegetable rice, repeat till all is used up. Scatter raisins on top.
  7. Your layered biryani is ready. Serve hot.
My Tip: Layers soak the flavour and that is the main idea of the dish.
