Whole wheat Zingy Parcels

Ingredients to make Whole wheat Zingy Parcels

  • Whole wheat flour- 1cup plus 2 tbsp
  • Instant yeast 1tsp
  • sugar 1 tsp
  • salt 1/2 tsp
  • olive oil 1Tbsp
  • Lukewarm water 1/2 cup
  • Milk powder 1½ tsp
  • For the Filling-
  • Mayonnaise 1 tbsp
  • cottage cheese cut into cubes 100g
  • salt to taste
  • Black pepper powder to taste
  • turmeric powder 1/4tsp
  • jeera powder 1/4tsp
  • coriander powder 1/4tsp
  • cinnamon powder a pinch
  • Pizza sauce to spread
  • Mozzarella cheese 2tbsp
  • Pizza seasoning to sprinkle
  • olive oil for basting

How to make Whole wheat Zingy Parcels

  1. Mix together flour, milk powder, sugar and salt in a mixing bowl.
  2. Make a well in centre and add oil, yeast and water.
  3. Knead together to make a smooth dough.
  4. Knead the dough very well for 10 min using stretch and fold method to form gluten in the dough.
  5. Brush the dough with oil and keep covered in greased bowl for 1hr.
  6. It will swell to double size.
  7. Punch it down to its original size.
  8. Divide the dough into 4 equal parts.
  9. Roll the dough in the shape of ball and roll it like a chapati. Fold it like a triangle as shown in the pic
  10. Now mix all the ingredients of filling.
  11. Spread the pizza sauce and put 1tbsp filling on it. Sprinkle some mozzarella cheese over it.
  12. Now fold it like a parcel as shown in the above pic.
  13. Brush the parcel with olive oil and sprinkle some pizza seasoning over it.
  14. Keep it aside for 20-30min for second proofing.
  15. Bake it at 180deg for 15-20 min.

My Tip:

The water used should always be lukewarm. It should be neither hot nor cold. As hot water will kill the yeast and cold will not activate the yeast. If the pizza dough is not to be used immediately, you can freeze the dough after kneading. Defrost at room temperature and leave to rise in usual way. You can add herbs to your dough for extra flavour.
