Chickpea and Red Bean salad

Ingredients to make Chickpea and Red Bean salad

  • 1/2 cup red kidney beans (rajma)
  • 1/2 cup chickpeas (safeed/kabuli channa)
  • 1 cup grapes (black or green)
  • 1 cup Peeled pieces of orange
  • 1 Small capsicum - thinly sliced
  • 1 onion - thinly sliced
  • 2 tomatoes - deseeded and thinly sliced
  • 4 tbsp mango chutney
  • 4 tbsp olive oil
  • 1 tbsp honey
  • 1/4 th cup Chopped coriander leaves
  • 1 tbsp crushed garlic
  • 2 green chillies - chopped

How to make Chickpea and Red Bean salad

  1. Soak the chickpeas and the kidney beans for 2 hours. Pressure cook these together with some salt and water in a pressure cooker. Drain and keep aside.
  2. Place boiled rajma, channa, grapes or orange, capsicum, onion and tomatoes in a bowl. Mix well.
  3. Place all the ingredients of the dressing in a mixer and blend to a smooth puree. Pour the dressing over the salad and mix well.
  4. Chill for 1 hour and serve
