ABOUT Chickpea and Red Bean salad RECIPE

A healthy, nutritious and filling salad with great flavour. It is quick to make as it uses canned beans and chickpeas. This is a good protein combination for vegetarians. It is delicious served with crunchy French or Italian bread slices.

Ingredients Serving: 8

  1. 1/2 cup Red kidney beans (rajma)
  2. 1/2 cup Chickpeas (safeed/kabuli channa)
  3. 1 cup Grapes (black or green)
  4. 1 cup Peeled pieces of orange
  5. 1 Small capsicum - thinly sliced
  6. 1 onion - thinly sliced
  7. 2 Tomatoes - deseeded and thinly sliced
  8. 4 tbsp Mango chutney
  9. 4 tbsp Olive oil
  10. 1 tbsp Honey
  11. 1/4 th cup Chopped coriander leaves
  12. 1 tbsp crushed garlic
  13. 2 Green chillies - chopped

Instructions

  1. Soak the chickpeas and the kidney beans for 2 hours. Pressure cook these together with some salt and water in a pressure cooker. Drain and keep aside.
  2. Place boiled rajma, channa, grapes or orange, capsicum, onion and tomatoes in a bowl. Mix well.
  3. Place all the ingredients of the dressing in a mixer and blend to a smooth puree. Pour the dressing over the salad and mix well.
  4. Chill for 1 hour and serve
