ABOUT Kodo Rice Mushroom Briyani RECIPE

First of all to say about Kodo, it is gluten free and a vegan cereal. Kodo is rich in fiber, protein, minerals and vitamins. Also Kodo millet controls Obesity. When .on a diet for weight loss this dish is a tasty nad lip smacking healthy recipe.

Ingredients Serving: 3

  1. Kodo rice 1 cup
  2. Water 2.5 cups
  3. Mushroom 1 pack
  4. onions 2(sliced)
  5. tomaoes 2 finely chopped
  6. gingergarlic paste 2 tablespoon
  7. chilli powder 1.5 tablespoon
  8. Turmeric powder 1 teaspoon
  9. green chilli 1(slit)
  10. mint leaves handful
  11. Curry leaves 1 spring
  12. Salt to taste
  13. Cloves 3
  14. cinnamon 2 pieces
  15. Bay leaf 1
  16. elaichi 1
  17. Oil 2 tablespoon

Instructions

  1. first wash kodo rice and soak it in water for 30 minutes
  2. In the meanwhile clean mushrooms and dice it
  3. Then, Heat oil in a pressure cooker.
  4. add in the cloves, elaichi, cinnamon, and bay leaf
  5. then add in the onion and green chilli and saute it
  6. when the onion is translucent add the gingergarlic paste, curry leaves and mint leaves
  7. saute till the gingergarlic raw small leaves
  8. now add in the tomatoes and mix well
  9. when the tomatoes are cooked add the mushroom,. chiili powder, turmeric powder, salt and mix well
  10. now close the cooker for 2 to 3 minutes in low flame
  11. open and stir well
  12. now add the kodo rice and mix well
  13. again in low flame close with lid and stir in 2 to 3 minutes gap till the raw smell leaves
  14. now add the water and wait to water for boiling
  15. when the water starts to boil, mix well.
  16. now in low flame pressure cook for 2 whistles
  17. once the 2 whistles are done switch off the flame and wait for pressure to come down
  18. once pressure is down open the lid and mix well
  19. serve hot with raita.
  20. Note: salt and chiili powder is completely based on your own taste. if you want you can add more or less
