Ingredients to make Peri Peri Chicken With Veggie Salad

  • chicken Drumsticks 500 gms
  • Red capsicum 1 large chopped
  • Red Bird's Eye chilly 5
  • garlic 5
  • Red chilly powder 2 tbsp
  • Black pepper powder 1 tbsp
  • vinegar 2 tbsp
  • Oregano 1 tbsp
  • salt to taste
  • oil 1/2 cup

How to make Peri Peri Chicken With Veggie Salad

  1. Take the chicken and make slashes on both sides and keep aside.
  2. In a blender take all the ingredients except chicken and blend it into a fine paste.
  3. Pour the paste over the chicken and mix well.
  4. Rub the paste all over the chicken nicely and marinate them for atleast 4 hour or overnight. I Kept for only 30 mins due to time constraint.
  5. Take the marinated chicken and mix well.
  6. Rub off the excess sauce and Microwave in combination mode (microwave+grill) for 20-25 mins. Mine was done in 20 mins.
  7. Turn them over midway every 5 mins and Rub the chicken with the left over paste in between the cooking.
  8. Take it out and serve it along with Salad or any dipping of your choice.

My Tip:

The longer marination the better. You can pan bake this over the gas stove and even bake in oven.
