ABOUT Peri Peri Chicken With Veggie Salad RECIPE

The word Peri Peri comes from the Swahili wordPili Pili which stands for pepper/spicy chilli. It is a spicy dish. So if you love spice this is a must try recipe.

Ingredients Serving: 3

  1. Chicken Drumsticks 500 gms
  2. Red Capsicum 1 large chopped
  3. Red Bird's Eye Chilly 5
  4. Garlic 5
  5. Red Chilly powder 2 tbsp
  6. Black pepper powder 1 tbsp
  7. Vinegar 2 tbsp
  8. Oregano 1 tbsp
  9. Salt to taste
  10. Oil 1/2 cup

Instructions

  1. Take the chicken and make slashes on both sides and keep aside.
  2. In a blender take all the ingredients except chicken and blend it into a fine paste.
  3. Pour the paste over the chicken and mix well.
  4. Rub the paste all over the chicken nicely and marinate them for atleast 4 hour or overnight. I Kept for only 30 mins due to time constraint.
  5. Take the marinated chicken and mix well.
  6. Rub off the excess sauce and Microwave in combination mode (microwave+grill) for 20-25 mins. Mine was done in 20 mins.
  7. Turn them over midway every 5 mins and Rub the chicken with the left over paste in between the cooking.
  8. Take it out and serve it along with Salad or any dipping of your choice.
