Tandoori masala

Ingredients to make Tandoori masala

  • Dry red chillies - 10-12
  • coriander seeds - 2 tbsp
  • cumin seeds - 1 tbsp
  • pepper - 1/2 tbsp
  • cloves - 1/2 tbsp
  • cinnamon - 2" piece
  • cardamom - 2 pods, peeled
  • fenugreek seeds - 1/2 tsp
  • fennel - 1/2 tsp
  • mace - 2-3 strands
  • ginger powder - 1 tsp
  • garlic Powder - 1 tsp
  • turmeric powder - 1 tsp

How to make Tandoori masala

  1. Dry roast red chillies and keep aside.
  2. Add coriander, cumin, fennel and fenugreek to the same pan and roast till its aromatic. Take out and keep aside to cool.
  3. Take all the remaining whole spices and roast these as well.
  4. When all spices are cool, grind to a fine powder. Take out in a bowl and mix in the spice powders.
  5. Store in an airtight container and use as required.

My Tip:

I dont use food color. Mix few dry kashmiri red chillies alongwith the short red chillies for the color. When using mix in lime juice as well.
