Brocolli and chicken salad

Ingredients to make Brocolli and chicken salad

  • Boneless chicken - 250 gms
  • For marination:
  • curd - 2 tbsp
  • mint Leaves - A Handful
  • coriander leaves - a handful
  • garlic cloves - 5
  • green chillies - 3-4
  • For salad:
  • Broccoli - 1 cup
  • onion - 2, sliced
  • almonds - 1/4 cup, peeled and sliced
  • olive oil - 1/2 tbsp
  • Juice of one lime
  • chilli flakes - 1/2 tsp
  • garlic powder - 1/4 tsp
  • salt

How to make Brocolli and chicken salad

  1. Make a paste of mint leaves, coriander, green chillies and garlic. Keep aside a tsp of the paste and marinate the chicken in the remaining paste and add curd and salt. Leave for an hour.
  2. Apply salt and pepper to broccoli and grill lightly, maybe 4-5 minutes on both sides.
  3. Mix olive oil, lime juice and the mint paste which was kept aside, in a large bowl.
  4. Grill the chicken and cut into pieces.
  5. Mix all ingredients, the broccoli, chicken, onion, almonds in the olive oil mixture. Add garlic powder, chilli flakes and salt.
  6. Toss and serve.
