Ingredients to make Bottle gourd soup with mushroom bread

  • bottle gourd 250 gm
  • onion 1/3 rd cup diced
  • 1-2 garlic cloves
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander seeds
  • 1 tsp whole wheat flour
  • salt and pepper [as per taste]
  • FOR mushroom BREAD:-
  • 8 to 10 mushrooms
  • roasted garlic 1/2 tsp
  • 1 piece brown bread
  • Salt and pepper [as per taste]
  • 1-2 drops of oil

How to make Bottle gourd soup with mushroom bread

  1. Heat 1/2 tbsp of oil in a pressure cooker.
  2. Add cumin seeds and coriander seeds and saute till they turn little brown
  3. Add chopped garlic and onions, saute for few seconds.
  4. Now add whole wheat flour
  5. Finally add diced bottle gourd
  6. Add salt to taste
  7. Add 1.5 cups of water.
  8. Give two whistles in pressure cooker and then cook it in low flame for few minutes
  9. Churn the soup using hand blender
  10. Sieve the soup and garnish with black pepper and coriander leaves
  11. MUSHROOM BREAD RECIPE:-
  12. Take mushrooms and cut into small pieces
  13. Take non stick tawa and put few drops of oil then add mushrooms
  14. saute for few minutes
  15. Add salt and pepper when they turn golden brown
  16. Add roasted garlic and switch off the gas
  17. Take brown bread and roast it in non stick tawa
  18. Cut the bread in two pieces
  19. Spread green chutney and roasted mushrooms on the bread
  20. Serve hot with bottle gourd soup

We can add lemon juice in bottle gourd or lauki soup to make it more tasty
