BABYCORN SOUP

Ingredients to make BABYCORN SOUP

  • 1 cup baby corn-slit into two, lengthwise1/4
  • 2 cups of water
  • 1 teaspoon ginger finely chopped
  • 1 teaspoon green chillies finely chopped
  • 1 table spoon coriender leaves and mint leaves or parsley finely chopped
  • 1/4 cup finely chopped cauliflower florets
  • 1/4 cup finely chopped carrot cubes
  • 1/4 cup finely chopped tomato cubes
  • 1/4 cup finely chopped onion cubes
  • 1/4 cup finely chopped mashrooms cubes
  • 1/4 cup finely chopped cottage cheese /paneer cubes
  • 1 rable spoon pepper
  • salt per taste
  • 1 table spoon lime juice
  • 1 table spoon butter /oil
  • 2 bay leaf
  • 2 table spoon bread crumbs

How to make BABYCORN SOUP

  1. Microvave all the veggies with corns except onions tomatoes and paneer or blanch for 2 minitues
  2. In a pan,heat butter/oil, stir fry the ginger,and green chilies vd bay leaves and onions for about 2 minutes.
  3. Add the corn and all the vegetables with paneer (except tomatoes pepper, and salt and stir-fry 2-3 times.
  4. Add bread crumbs saute little
  5. Add, water and salt. Let it boil, on medium flame for 20 mins .while stirring occasionally till it thickens slightly,
  6. Then add tomatoes
  7. Mix well cook for a couple of minutes while stirring occasionally on medium flame
  8. Remove from heat and garnish with coriender leaves mint or parsley squeeze lemon juice serve hot immediately.

My Tip:

Add tomatoes at last
