Cucumber Pinwheels

Ingredients to make Cucumber Pinwheels

  • 1 big, long dark green cucumber
  • 3/4 cup sun dried tomatoes in olive oil
  • Half teaspoon red chilli flakes
  • Half of an avocado
  • Pinch of salt
  • Chaat masala a pinch

How to make Cucumber Pinwheels

  1. Clean and wash cucumber throughly as it is not to be peeled.
  2. Using a mandolin carefully slice the cucumbers into thin long slices
  3. Add sun dried tomatoes(i have shared the process in tips section to make it at home), avocado, salt, and red chilli flakes into mixer jar.
  4. Pulse it till every thing combines well and forms a paste.
  5. Add chaat masala for that zing
  6. Mix well again
  7. Using the spoon, spread paste down the middle of a slice of cucumber.
  8. Carefully roll up the cucumber
  9. stick a toothpick through to hold it all together.
  10. Garnish with tomato juliennes.

My Tip:

To make sun dried tomatoes: Wash and clean the tomatoes and chop them into halves. Scoop out the flesh using a slotted spoon and place them in the sun for 2 to 3 days. Now place the semi dried tomatoes in a microwave proof flat dish, cut side down. Brush each cut piece with some olive oil and microwave on high for about 3-4 minutes one side. Flip the tomatoes over and microwave again for another 3-4 minutes. Continue to microwave each side till the tomatoes wilt and become dry. In a small pan, heat some olive oil and fry the garlic till they leave out flavours to the oil. Once they are brown, remove them from the oil and discard. Add in the oregano seasoning, salt and pepper to taste. In a bowl, place the dried tomato flakes and pour the garlicky olive oil. Season further if required.
