ABOUT Vegetable pasta soup RECIPE

A healthy one pot meal which is easy to make, nutritious, delicious and perfect for a winter evening.

Ingredients Serving: 4

  1. 1 tbsp olive oil
  2. 1 Onion, chopped
  3. 3-4 cloves garlic, crushed
  4. 2 bell pepper, diced
  5. 8-10 cauliflower florets,
  6. 8-10 baby corn, chopped
  7. 1 carrot, chopped
  8. 3 tbsp, green garlic leaves, chopped
  9. 6-7, tomatoes, chopped
  10. 1 cup boiled pasta
  11. 1 litre water
  12. 2 -3 tsp dried basil / fresh basil leaves
  13. 1 tsp Oregano
  14. 2 tsp black pepper powder
  15. Salt according to taste

Instructions

  1. Heat oil in a large pan, add onion and garlic, cook stirring continuously till the onion has softened
  2. Add carrot, bell pepper, cauliflower florets, green garlic leaves and baby corn. Cook for 5 minutes, stirring occasionally.
  3. Add the chopped tomatoes/ tomato puree and water or vegetable stock, bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Add the boiled pasta. Season with salt and pepper. Stir in the basil and oregano
  5. Serve in bowls with coriander and Parmesan cheese sprinkled on top and with slices of garlic bread.
