Vegetable pasta soup

Ingredients to make Vegetable pasta soup

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3-4 cloves garlic, crushed
  • 2 bell pepper, diced
  • 8-10 cauliflower florets,
  • 8-10 baby corn, chopped
  • 1 carrot, chopped
  • 3 tbsp, green garlic leaves, chopped
  • 6-7, tomatoes, chopped
  • 1 cup boiled pasta
  • 1 litre water
  • 2 -3 tsp dried basil / fresh basil leaves
  • 1 tsp Oregano
  • 2 tsp black pepper powder
  • salt according to taste

How to make Vegetable pasta soup

  1. Heat oil in a large pan, add onion and garlic, cook stirring continuously till the onion has softened
  2. Add carrot, bell pepper, cauliflower florets, green garlic leaves and baby corn. Cook for 5 minutes, stirring occasionally.
  3. Add the chopped tomatoes/ tomato puree and water or vegetable stock, bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Add the boiled pasta. Season with salt and pepper. Stir in the basil and oregano
  5. Serve in bowls with coriander and Parmesan cheese sprinkled on top and with slices of garlic bread.

My Tip:

Add/ eliminate veggies of your choice. Also add 1 tbsp of tomato ketchup for that hint of sweetness.
