Ingredients to make Asian inspired Rainbow Vermicelli Salad with Peanuts !! Microwave Cooking Contest

  • rice vermicelli 100 gms
  • purple cabbage , red & yellow capsicum, japanese cucumber thinly slices as shown in the picture.
  • roasted peanuts, chopped spring onions, lemon wedges & fresh mint leaves for garnishing/topping.
  • For making Dressing - Mix all the below listed ingredients and keep aside for flavours to be infused.
  • Soy Sauce- 3 tbsp
  • Sri racha sauce - 1-2 tbsp (as per your preference for spicy)
  • 1 tbsp brown sugar/Honey
  • 1 tbsp roasted sesame seeds
  • juice of 1 lemon/ rice vinegar-1 tbsp
  • 1 tbsp toasted sesame oil /any oil of your choice.
  • .1 finely chopped garlic (optional)

How to make Asian inspired Rainbow Vermicelli Salad with Peanuts !! Microwave Cooking Contest

  1. Cook Rice vermicelli , soaked in water for about 5 mins in a microwave compatible bowl with a lid on.
  2. I used 900w microwave on full power an it took me 5 mins to cook the vermicelli .let them soak in hot water for additional 5-10 mins more if not cooked fully.
  3. let vermicelli cool till you can handle it comfortably.I prefer to run it through tap water to prevent over cooking.
  4. Take a wide bowl and toss garden veggies with vermicelli + 1-2 tbsp or more dressing (amount as per your preference) and mix well.
  5. Serve in plates and topped it with lots of roasted Peanuts :)) & fresh mint leaves.Serve with a lemon wedge & enjoy !!

My Tip:

For dressing- pls adjust sweet & spicy combination as per your preference for mild/spicy. I added some small red chillies to make it extra spicy. Note- Pls note cooking time may vary for cooking vermicelli for different microwave ovens. Vermicelli has to be cooked al-dente .
