Veg Quesadillas(Mexican paratha)

Ingredients to make Veg Quesadillas(Mexican paratha)

  • wheat flour-200 gms
  • Red capsicum-150gms
  • Yellow capsicum-150gms
  • Green capsicum-150gms
  • Sweetcorn-150 gms
  • paneer-150gms
  • ginger greenchilli paste-1tsp
  • salt to taste
  • Black pepper-1 tsp
  • Oregano-2tsp
  • red chilli flakes-2 tsp
  • Mozzarella cheese-100 gms
  • ghee/oil for roasting the parathas

How to make Veg Quesadillas(Mexican paratha)

  1. Chop all 3 capsicums .
  2. Boil sweetcorn kernels .
  3. Knead dough for parathas with salt and 2 spoons oil and water as required.
  4. Take a pan and add oil.Add ginger chilli paste to it.T hen add all capsicum and saute for about 3 to 4 minutes.Add boiled sweetcorn.Lastly add crumbled paneer,salt,blackpepper,oregano, chilliflakes and mix properly.
  5. Cook for 2 minutes and put off the gas.The cooked filling will look like this
  6. Now take a ball of flour and roll like roti.Put it on tawa and semi roast it.Remove from tawa and take it on a plate.It should be like this
  7. Grate cheese on half of this roti.Then add the filling about 2 spoons.Again sprinkle cheese on this and fold the other half on this to form sandwich like.
  8. Now apply ghee and roast this on slow flame on both sides. Your crisp and yummy mexican parathas are ready.Serve with tomato ketchup.
