Ingredients to make South indian cusine

  • urad dal 1 cup
  • Rice 3 cups
  • Channa dal 1 tbsp
  • Mustard seeds 1 tsp
  • Raw poha 1 tbsp
  • Salt 1 tsp
  • Water to grind
  • For the filling,:
  • Boiled potatoes 5
  • Oil 2 tsp
  • Sarson seeds 1 tsp
  • Channa dal 1 tsp
  • Curry patta 7- 8
  • Salt 1 tsp
  • Turmeric powder 1/2 tsp
  • Sambar powder 1 tsp
  • Red chilli powder 1/2 tsp
  • For sambar:
  • Aarhar dal 1 katori
  • Ghia cut in cubes 1 katori
  • Tomatoes 6 cut into cubes
  • Lady finger 8 pieces cut length wise in four pieces
  • Sita phal cut into cubes 1 katori
  • Salt 3 _ 4 tsp
  • Turmeric powder 1 tsp
  • Red chilli powder 1/2 tsp
  • Sambar powder 3- 4 tsp
  • Tamrind pulp 2 tbsp
  • Hing powder 1/2 tsp
  • Ghee 2 tsp
  • For Tempering :
  • Ghee 1 tbsp
  • Sarson seeds 1 tsp
  • Curry leaves 8-10
  • Whole Dry Red chilli 1

How to make South indian cusine

  1. Soak the dal ,chawal , mustard seeds ,channa dal ,and the poha for 6- 7 hours .Soak all together.
  2. Wash them properly.
  3. Grind in a mixer to a fine paste.
  4. Add salt and keep the batter to ferment.for 8-10 hours
  5. The batter should be slightly thicker than the pouring consistency
  6. For the filling:
  7. Take a pan
  8. Put oil .Let it get hot.
  9. Add channa dal ,cook for about a minute.
  10. Than add the sarson seeds .Let it splutter.
  11. To this add the whole red chilli ,and curry leaves. Cook for a while.
  12. Add all the masalas.saute ..
  13. Now add the boiled potatoes. Cook for 5- 10 MTS.
  14. Put the non stick tawa on the flame.
  15. Heat it. Smear some oil on it. Clean the tawa with a dry cloth.
  16. Lower the flame.
  17. Put a tbsp of the batter and spread in a circular motion.
  18. Put oil on the side
  19. Higher the flame. Let it cook.
  20. Put a tbsp of the filling in the center.and roll the dosa
  21. For sambar:
  22. Wash and soak the dal for 1/2 an hour.
  23. In the pressure cooker put the dal ,all the cut veggies ,and all the masalas .Put ghee except the lady finger add all the other vegetables
  24. Put 2 cups of water . Close the lid .Let it pressure cook till 3- 4 whistles. Off the gas. Let the pressure drop on its own
  25. After the pressure drops open the lid and blend the mixture with blender.
  26. In the meantime put a heavy bottom vessel on the flame
  27. Put ghee.Heat it .
  28. Put hing ,sarson seeds. , whole red chilli curry leaves ,cook for a while.
  29. Put the sambar powder. Cook
  30. Add the lady fingers ,saute for 5 MTS.
  31. Put the blended mixture.
  32. Add 2-3 cups of water .Boil it
  33. Add the tamarind pulp . Cook for another 15 MTS
  34. Serve hot with the dosa.
