ABOUT Chettinad Fried Chicken RECIPE

This recipe is from Chef Sanjeev Kapoor taken from Wonderchef Cook With Pride recipe book. It is a Chettinad cuisine, chicken marinated in spicy masala and pan fried.

Ingredients Serving: 4

  1. Chicken - 800 gms with bones
  2. Dried Red Chillies - 6 broken
  3. Ginger - 1 inch roughly chopped
  4. Garlic - 5 cloves
  5. Green chillies - 4 roughly chopped
  6. Onions - 2 medium roughly chopped
  7. Curry leaves - 2 sprigs
  8. Salt to taste
  9. Turmeric powder - 1/2 tsp
  10. Rice flour - 2 tbsp
  11. Oil - 2 tbsp
  12. lemon juice - 1 tbsp

Instructions

  1. Take the onion, green chillies, dry chillies, ginger, garlic, curry leaves and grind them into a smooth paste by adding little water.
  2. Take the chicken in a mixing bowl, add the turmeric powder, rice flour, salt and the grounded paste and mix well.
  3. Keep it in the refrigerator to marinate for 2 hours.
  4. Take the marinated chicken, add lemon juice and mix well.
  5. Heat oil in a nonstick pan.
  6. Add the chicken in single layer without sticking to each other.
  7. Cover the pan and cook on medium heat till the chicken is almost cooked which will take approx 15-20 mins.
  8. Flip over the chicken pieces occasionally and cook on all sides.
  9. Pour the left over marinate, stir well, cover and cook on medium heat for about 5-7 mins and take off the heat.
