Subz Coconaka

Ingredients to make Subz Coconaka

  • Mixed vegetable (cauliflower, carrots, green peas, french beans) chopped 400 gms
  • Babycorn 100 gms
  • Large tomato 1
  • ginger-garlic paste 1-1/2 tbsp
  • cashew nuts 50 gms
  • coconut milk 1/2 cup
  • turmeric powder 1 tsp
  • Kashmiri red chilly powder 1tsp
  • oil 2 tbsp
  • salt to taste
  • Kasuri methi for garnish 1 tbsp

How to make Subz Coconaka

  1. Steam the chopped veggies and baby corn until soft. The texture should be al dante and not completely mushy. Note: You can add any vegetables of your choice
  2. Soak the cashew nuts in warm water and grind it to a fine paste
  3. Heat oil in a pan and add chopped tomatoes and ginger-garlic paste
  4. Add the turmeric powder and red chilli powder to it, add a splash of water and cook for 2 minutes.
  5. Put the steamed veggies into it and add salt
  6. Check if the veggies are nearly done. Now add the cashew paste and coconut milk and let it simmer for 2 minutes.
  7. Check the salt level
  8. Garnish with kasuri methi and serve hot.
