Heavenly and very nutritious combination loaded with iron,B vitamins and fiber.Bajra is a gluten free grain so can be taken by people with gluten intolerance.

Ingredients Serving: 4

  1. Big seedless brinjal-300 gms
  2. Green garlic-50 gms
  3. Green spring onions-100 gms
  4. tomato-1 big
  5. Green Chilli-1
  6. Corriander for garnishing
  7. Dry spices like turmeric,coriander powder,red chilli powder,salt
  8. For Bajra rotla:
  9. Bajra flour-500gms
  10. Salt to taste

Instructions

  1. Make a vertical cut on the brinjal and insert garlic cloves.
  2. Roast on gas directly or can keep a perforated jali and roast.Keep rotating the brinjal so that it gets roasted evenly.Then keep in a vessel covered for 5 minutes.
  3. Peel the brinjal and mash it.
  4. Heat about 1 tbsp of oil in a pan. Add chopped garlic,then chopped onions and green chillies. After 2 minutes add finely chopped tomatoes.Cook for 2 minutes and then add salt all dry spices like turmeric,chilli powder, coriander powder,cumin powder.Add mashed brinjal and mix properly.Cook for 2 minutes.
  5. Bajra rotlas:
  6. Take Bajra flour in a thali.Add salt.Pour water and keep kneading as u add water to the flour.The more you knead the flour the smoother it will become.Make a medium dough.
  7. Now sprinkle some dry flour on rolling board and take a smooth round ball of dough.You can press with your palm and gradually rotate and make rotlas or if you have practice can make with both palms into round shape.
  8. Put the rotlas on tavdi(clay tava).Brush with some water on upper side to prevent drying.
  9. After you see some blisters appearing turn the rotlas.cook properly and then lift and put it on gas flame like phulkas.
  10. Take off from flame and brush liberally with pure ghee and serve hot with bharta or sevtamatar sabji alongwith garlic chutney and jaggery.
