ABOUT Radish & Peanut Salad RECIPE

Simple and refreshing salad made with just few ingredients. This recipe is from 'the Food of India' cookbook written by Priyavikramasinghe.

Ingredients Serving: 4

  1. 8~10 Small Radishes, tops trimmed and quartered
  2. ½ cup Roasted Peanuts, coarsely chopped
  3. 1 tbsp oil
  4. ¼ tsp Mustard seeds
  5. ¼ cup Cumin seeds
  6. 1/8 tsp Asafoetida (hing)
  7. ¼ tsp Turmeric
  8. ¼ tsp Salt
  9. 1 tbsp lemon juice

Instructions

  1. Heat oil in a small saucepan over medium heat. Add the mustard and cumin seeds and once the seeds to splutter, add the turmeric, asafoetida and salt.
  2. Remove the pan from heat and add the lemon juice and let the mixture cool.
  3. Just before serving, arrange the radishes and the chopped peanuts in a bowl, pour the dressing over the top and mix thoroughly. Serve right away!!
